Having rafted the Zambezi river four times, I can tell you the very best time is the low water season from August to the end of the year.  The rapids, many of which are grade 5 and have names like "Gnashing Jaws of Death" and "The Overland Truck Eater", are out of this world.  Hold on to your hat (and your pants)!
