On day 7, your free day, it's a hard choice between all the different options. I stayed local and did the hike from Atrani / Amalfi to Ravello. It is a pleasant hike and there are several lunch-with-a-view options in Ravello.

DAY 3 Cycle to mediaeval Pisciotta; to the coast

DAY 5 Train to Salerno; cycle to Minori
DAY 6 Ride to Amalfi, Praiano and Positano
